One-Pan Cheesy Broccoli Rice Casserole

1 cup uncooked brown rice

2 cups vegetable broth or chicken broth

2 cups fresh broccoli florets (or frozen)

1 cup shredded sharp cheddar cheese

1 cup cottage cheese

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1 teaspoon salt (to taste)

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for spice)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, combine the uncooked brown rice and vegetable or chicken broth. Bring to a boil, then reduce the heat, cover, and simmer for 45 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and fluff with a fork.

      Sauté the Vegetables: While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onion and garlic, broccoli florets, shredded cheddar cheese, cottage cheese, Parmesan cheese, onion powder, garlic powder, salt, black pepper, and red pepper flakes if using. Stir well until all ingredients are evenly mixed.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch (or equivalent) baking dish, spreading it out evenly.

            Bake: Bake in the preheated oven for about 25-30 minutes or until the top is bubbly and golden brown.
