1 cup uncooked long-grain white rice

2 cups vegetable broth (or chicken broth)

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

1 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon salt, to taste

1 tablespoon olive oil

Optional: 1/4 cup grated Parmesan cheese for topping

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large oven-safe skillet or pan, heat the olive oil over medium heat. Add the chopped onion and garlic; sauté for about 3-4 minutes, or until the onion is translucent and fragrant.

      Cook the Rice: Add the uncooked rice to the skillet and stir for 1-2 minutes to lightly toast it.

        Combine Ingredients: Pour in the vegetable broth and milk. Then, add in the broccoli florets, onion powder, garlic powder, black pepper, paprika, and salt. Stir well to combine all ingredients.

          Bring to a Simmer: Increase the heat to bring the mixture to a gentle simmer. Let it simmer for about 2-3 minutes—this helps infuse the flavors before baking.

            Cheesy Goodness: Remove the skillet from heat and stir in 3/4 cup of the shredded cheddar cheese until melted and combined. If desired, you can sprinkle some grated Parmesan cheese on top.

              Bake the Casserole: Cover the skillet with a lid or aluminum foil and place it into the preheated oven. Bake for 20-25 minutes, or until the rice is tender and most of the liquid has been absorbed.
