One-Pan Cheesy Broccoli and Chicken Casserole

2 cups cooked chicken, shredded or diced

2 cups fresh broccoli florets

1 cup uncooked rice (long-grain or jasmine)

3 cups chicken broth

1 cup shredded cheddar cheese

1 cup cream of chicken soup (or any creamy soup)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

½ cup grated Parmesan cheese

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare Chicken and Rice: In a large skillet or a deep oven-safe pan, heat the olive oil over medium heat. If using uncooked chicken, sauté it in the pan until golden brown. Otherwise, skip this step if your chicken is already cooked. Add the rice, stir to combine, and cook for about 2 minutes to lightly toast the rice.

    Add Broccoli and Broth: Stir in the fresh broccoli florets, chicken broth, cream of chicken soup, garlic powder, onion powder, paprika, salt, and pepper. Mix well to combine all the ingredients.

      Simmer the Mixture: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover with a lid, and let it simmer for about 15-20 minutes until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

        Incorporate Cheeses: After the rice is cooked, remove the lid and fold in the shredded cheddar cheese and half of the grated Parmesan cheese. Mix until the cheeses are melted and everything is well combined.

          Bake (Optional): For a cheesy and bubbly top, preheat your oven to 375°F (190°C). Sprinkle the remaining Parmesan cheese over the top, and place the skillet in the oven for about 10-15 minutes until the cheese is golden and bubbly.

            Serve: Once done, remove from the oven or stovetop, sprinkle with freshly chopped parsley for a pop of color, and serve hot!
