1/3 cup honey (or maple syrup for a vegan option)

1/2 cup mixed nuts (walnuts, pecans, and cashews, roughly chopped)

1/2 cup dark chocolate chips (or carob chips)

1/4 cup dried cranberries (or raisins)

1/4 cup sunflower seeds

1 teaspoon vanilla extract

A pinch of sea salt

Prepare your mixing bowl: In a large mixing bowl, combine the rolled oats, mixed nuts, sunflower seeds, dried cranberries, and dark chocolate chips. Stir until well incorporated.

    Heat the wet ingredients: In a small saucepan over low heat, warm the almond butter and honey together, stirring until smooth and well combined. If using maple syrup, skip this step as it does not require heating.

      Mix the wet and dry ingredients: Remove the saucepan from heat and add the vanilla extract and a pinch of sea salt to the almond butter and honey mixture. Pour this mixture over the dry ingredients in the large bowl.

        Combine thoroughly: Use a spatula or wooden spoon to mix everything together until all dry ingredients are evenly coated with the wet mixture. It may take a bit of effort, but ensure none of the dry ingredients are left dry.

          Form the clusters: Line a baking sheet with parchment paper. With your hands, scoop out portions of the mixture and roll them into small balls or flatten them into clusters (about 1 inch in diameter) directly onto the parchment paper.
