1 ½ cups rolled oats

1 cup unsweetened shredded coconut

½ cup nuts (cashews or almonds, chopped)

½ cup medjool dates, pitted and chopped

½ cup mango puree (fresh or canned)

¼ cup maple syrup or honey

1 tsp vanilla extract

½ tsp salt

Extra shredded coconut for garnish (optional)

Instructions
 

Prepare the Base: In a food processor, combine the rolled oats, shredded coconut, chopped nuts, and salt. Pulse until the mixture is finely chopped but not turned into flour.

    Add Sweetness: Add the pitted and chopped medjool dates, mango puree, maple syrup (or honey), and vanilla extract to the processor. Blend until the mixture is sticky and holds together when pressed. If it seems too dry, add a splash of water or extra mango puree.

      Press into Pan: Line a 9x9-inch square dish with parchment paper, leaving a bit of an overhang on the sides. Transfer the mango coconut mixture into the dish. Press it down firmly using the back of a spatula or your hands to create an even layer.

        Chill: Cover the dish with plastic wrap and refrigerate for at least 1-2 hours, or until firm.
