1 cup Medjool dates, pitted

1/2 cup unsweetened shredded coconut, plus extra for garnish

1/4 cup almond butter (or any nut/seed butter of your choice)

Zest of 1 lemon

Juice of 1 lemon (about 2-3 tablespoons)

1 tablespoon maple syrup (optional, for additional sweetness)

1/2 teaspoon vanilla extract

Pinch of salt

1/4 cup chopped nuts (optional, can use almonds or walnuts)

Prepare the Base: In a food processor, combine the rolled oats and shredded coconut. Pulse them together until they reach a fine texture, about 15-20 seconds.

    Add the Sticky Ingredients: Add the pitted Medjool dates, almond butter, lemon zest, lemon juice, and vanilla extract to the oat and coconut mixture. If you prefer a sweeter bar, add the maple syrup and a pinch of salt.
