2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans), roughly chopped

1/2 cup sunflower seeds

1/2 cup dried fruit (cranberries, cherries, or raisins)

1/2 cup natural nut butter (almond butter or peanut butter)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon sea salt

Optional: 1/4 teaspoon ground cinnamon

Prepare the baking dish: Line an 8x8 inch (or equivalent size) square pan with parchment paper, leaving some overhang for easy removal later.

    Mix the dry ingredients: In a large bowl, combine the rolled oats, chopped nuts, sunflower seeds, dried fruit, and (if using) ground cinnamon. Stir until well mixed.

      Combine wet ingredients: In a separate bowl, whisk together the nut butter, honey (or maple syrup), vanilla extract, and sea salt until smooth and fully combined. If your nut butter is solid, you can warm it slightly in the microwave to make it easier to mix.

        Combine wet and dry: Pour the wet mixture into the bowl with the dry ingredients. Use a spatula or your hands to mix until all the dry ingredients are evenly coated and everything is well combined.

          Press into the pan: Transfer the mixture into the lined baking dish. Press down firmly and evenly to ensure the mixture holds together. You might find it helpful to use another piece of parchment paper to press down without sticking.

            Chill: Place the pan in the refrigerator for at least 1-2 hours to set. This will help the granola squares firm up for easier slicing.

              Cut and serve: Once set, lift the granola mixture out of the pan using the parchment paper. Place on a cutting board and slice into squares or bars as desired.

                Store: Place any leftovers in an airtight container. They can be stored in the fridge for up to a week or kept at room temperature in a cool, dry place for up to 5 days.
