Mini Veggie Quesadillas

6 small whole wheat tortillas

1 cup shredded cheddar cheese

1/2 cup crumbled feta cheese

1 small bell pepper (any color), diced

1/2 cup corn kernels (fresh or frozen)

1 small zucchini, grated

1/2 cup black beans, rinsed and drained

1 small red onion, finely chopped

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Salsa (for serving)

Instructions
 

Sauté the Vegetables: In a medium skillet, heat olive oil over medium heat. Add the chopped red onion, bell pepper, and grated zucchini. Sauté until they soften (about 5 minutes). Stir in the corn and black beans, followed by the cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until heated through. Remove from heat and set aside.

    Cheese Mix: In a bowl, combine the shredded cheddar and crumbled feta cheese.

      Assemble the Quesadillas: Lay a tortilla on a flat surface. Spread a thin layer of the cheese mixture evenly over one half of the tortilla. Add a generous spoonful of the sautéed veggie mixture on top of the cheese, then fold the tortilla in half to create a semi-circle. Repeat this process with the remaining tortillas.

        Cook the Quesadillas: In the same skillet, add a little more olive oil if needed. Cook the quesadillas for about 2-3 minutes on each side, or until golden brown and crispy, and the cheese is melted.

          Cut and Serve: Remove from the skillet and let them cool for a minute. Cut each quesadilla into triangles and garnish with fresh cilantro. Serve with slices of avocado and a side of salsa for dipping.
