Mini Veggie Lasagna Wonton Cups

24 wonton wrappers

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup spinach, chopped (fresh or frozen and thawed)

1 zucchini, finely chopped

1 bell pepper, finely chopped (any color)

1 cup marinara sauce (store-bought or homemade)

1 teaspoon dried oregano

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon pepper

Olive oil spray for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Wonton Cups: Lightly spray a muffin tin with olive oil. Gently press a wonton wrapper into each muffin cup, forming a cup shape. Make sure to have a slight overlap at the edges.

      Prepare the Veggie Filling: In a mixing bowl, combine ricotta cheese, ½ cup mozzarella cheese, Parmesan cheese, chopped spinach, zucchini, bell pepper, oregano, garlic powder, salt, and pepper. Mix until well combined.

        Assemble the Cups: Spoon about 1 tablespoon of the marinara sauce into the bottom of each wonton cup. Then, add about 2 tablespoons of the veggie filling on top of the sauce. Repeat the layers by adding another spoonful of marinara sauce followed by a layer of the veggie filling. Top each cup with the remaining mozzarella cheese.

          Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the cheese is bubbly and the edges of the wonton wrappers are golden brown.

            Cool and Serve: Allow the mini lasagna cups to cool for a few minutes before carefully removing them from the muffin tin. Serve warm with a sprinkle of fresh herbs or extra marinara sauce on the side if desired.
