Ingredients

1 cup sweet corn kernels (fresh or frozen)

1 cup shredded sharp cheddar cheese

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 teaspoon baking powder

1/4 teaspoon paprika

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1 large egg, beaten

1/4 cup milk

2 tablespoons chopped fresh chives (optional)

Vegetable oil, for frying

Instructions

Prepare the Mixture: In a mixing bowl, combine the sweet corn kernels, shredded cheddar cheese, all-purpose flour, cornmeal, baking powder, paprika, garlic powder, salt, and black pepper. Mix well to combine all the dry ingredients with the corn and cheese.

Add Wet Ingredients: In a separate bowl, whisk together the beaten egg and milk until well combined. Pour this mixture into the dry ingredients and stir until just combined. Fold in the chopped chives if using.

Form the Balls: Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls, approximately 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Heat the Oil: In a large frying pan or deep skillet, pour enough vegetable oil to cover the bottom of the pan (about 1/2 inch deep). Heat the oil over medium heat until it reaches 350°F (175°C).

Fry the Poppers: Carefully work in batches, adding the corn cheddar balls to the hot oil. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy. Make sure not to overcrowd the pan.

Drain and Serve: Once golden, transfer the poppers to a plate lined with paper towels to drain excess oil. Serve warm with your favorite dipping sauce (like ranch, salsa, or a spicy aioli) to enhance the flavors.

Enjoy: Gather friends or family around and enjoy these delightful little bites as a snack or appetizer!
