1 cup elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup cream cheese, softened

1/2 cup milk

1/2 cup sour cream

1 tablespoon butter

2 cloves garlic, minced

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

6 fresh jalapeños, halved and seeds removed

1 cup panko bread crumbs

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Cook the Macaroni: Boil a pot of salted water and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In a medium-sized saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about a minute until fragrant. Stir in the cream cheese, allowing it to melt, then gradually add the milk and stir until smooth.

      Combine Ingredients: Add the shredded cheddar cheese, sour cream, onion powder, smoked paprika, and season with salt and pepper. Stir until the cheese is completely melted and the sauce is creamy. Incorporate the cooked macaroni into the cheese sauce and mix thoroughly to coat all the pasta evenly.

        Stuff the Jalapeños: Preheat your oven to 375°F (190°C). Place the jalapeño halves cut-side up on a baking sheet lined with parchment paper. Spoon the mac and cheese mixture generously into each jalapeño half.

          Top with Panko: Sprinkle panko bread crumbs over the mac & cheese-filled jalapeños for an extra crunch and texture.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and the panko is golden brown.

              Garnish and Serve: Remove the jalapeño bites from the oven and let them cool for a few minutes. Garnish with chopped fresh parsley before serving.
