Mini Chicken Teriyaki Lettuce Wraps

1 lb ground chicken

2 tablespoons soy sauce

1 tablespoon teriyaki sauce

1 tablespoon sesame oil

1 teaspoon fresh ginger, minced

2 cloves garlic, minced

1/4 cup green onions, thinly sliced (plus more for garnish)

1/4 cup shredded carrots

1/4 cup water chestnuts, diced

1 tablespoon rice vinegar

Salt and pepper, to taste

1 head of butter lettuce or romaine lettuce, leaves separated

Sesame seeds, for garnish

Instructions
 

Cook the Chicken: In a large skillet over medium heat, add sesame oil. Once hot, add the ground chicken. Break it apart with a spatula and cook, stirring frequently until browned and cooked through, about 5-7 minutes.

    Add Flavor: Stir in the minced ginger and garlic, cooking for an additional 1-2 minutes until fragrant.

      Combine Sauces: In a small bowl, whisk together soy sauce, teriyaki sauce, and rice vinegar. Pour this mixture over the cooked chicken, stirring well to coat uniformly. Cook for another 2-3 minutes until the sauce thickens slightly.

        Mix in Veggies: Add in the sliced green onions, shredded carrots, and diced water chestnuts, mixing well until everything is heated through. Taste and add salt and pepper as needed.

          Prepare Lettuce Cups: While the chicken mixture cools slightly, prepare your lettuce leaves by rinsing them under cold water and patting them dry with a paper towel.

            Assemble the Wraps: Take a lettuce leaf and spoon a generous amount of the chicken mixture into the center. Fold the sides of the lettuce around the filling to form a wrap.

              Serve and Garnish: Repeat the process until all chicken mixture is used. Garnish with sesame seeds and extra green onions. Serve immediately with additional teriyaki sauce on the side, if desired.
