Mini Chicken Nacho Tostada Bites

12 mini tostada shells

1 cup cooked shredded chicken (rotisserie chicken works great!)

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup black beans, rinsed and drained

1/2 cup diced tomatoes

1/4 cup sliced jalapeños (fresh or pickled)

1/4 cup sour cream

1/4 cup guacamole

1 tablespoon taco seasoning

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken Mixture: In a mixing bowl, combine the shredded chicken with taco seasoning. Toss until the chicken is well coated with the seasoning.

      Assemble the Tostada Bites: Place the mini tostada shells on a baking sheet. In each shell, layer a spoonful of the seasoned chicken, a few black beans, diced tomatoes, and a generous sprinkle of shredded cheese.

        Bake the Tostada Bites: Place the baking sheet in the preheated oven and bake for about 8-10 minutes, or until the cheese is melted and bubbly.

          Add Fresh Toppings: Remove the baking sheet from the oven. Carefully add a slice of jalapeño on top of each tostada for extra flavor.

            Serve: Finally, add a dollop of sour cream and guacamole on each mini tostada bite. Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the bites.
