Mini Cheesy Veggie Wonton Cups

1 package of wonton wrappers (about 48 wrappers)

1 cup shredded mozzarella cheese

1 cup ricotta cheese

1 cup fresh spinach, chopped

1/2 cup red bell pepper, finely diced

1/2 cup zucchini, grated

1/4 cup green onions, chopped

1 clove garlic, minced

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

Olive oil spray or 2 tbsp olive oil for brushing

Optional: Additional shredded cheese for topping

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Wonton Wrappers: Lightly spray a muffin tin with olive oil. Carefully press each wonton wrapper into the muffin cups, ensuring they fit snugly. Brush the exposed edges with olive oil or spray lightly.

      Mix the Filling: In a large bowl, combine the mozzarella cheese, ricotta cheese, chopped spinach, diced red bell pepper, grated zucchini, green onions, minced garlic, oregano, salt, and pepper. Stir until all ingredients are well mixed.

        Fill the Cups: Spoon a generous amount of the veggie and cheese mixture into each wonton cup, filling them about three-quarters full. If desired, sprinkle additional shredded cheese on top of the filling.

          Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the wonton edges are golden brown and the cheese is bubbly.

            Cool and Serve: Once done, remove the muffin tin from the oven and let the wonton cups cool for a few minutes. Carefully remove them from the tin and serve warm as an appetizer or snack.
