Mexican Chicken Burrito Bake

2 cups cooked, shredded chicken

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup salsa (mild or spicy, depending on preference)

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese (or Mexican blend)

1 cup tortillas, cut into strips or quartered

1/4 cup chopped fresh cilantro (for garnish)

Sour cream (for serving, optional)

Avocado slices (for serving, optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Mix the filling: In a large bowl, combine the shredded chicken, black beans, corn, salsa, cumin, chili powder, garlic powder, onion powder, rice, and half of the cheddar cheese. Stir until everything is well mixed.

      Prepare the dish: In a greased 9x13 inch baking dish, spread half of the tortilla strips evenly across the bottom.

        Layer the filling: Pour the chicken and bean mixture over the tortillas, spreading it out evenly.

          Top with tortillas: Place the remaining tortilla strips on top of the chicken mixture to create a layer.

            Add cheese: Sprinkle the remaining cheddar cheese over the top of the tortilla layer.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
