1 lb Brussels sprouts, trimmed and halved

4 cloves garlic, minced

2 tablespoons olive oil

2 tablespoons pure maple syrup

1 teaspoon balsamic vinegar

1 teaspoon Dijon mustard

Salt and pepper, to taste

1/4 cup chopped walnuts (optional)

1/4 cup crumbled feta cheese (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Brussels Sprouts: Rinse the Brussels sprouts under cold water, trim the ends, and cut them in half. Place them in a large mixing bowl.

Make the Maple Mixture: In a small bowl, whisk together the olive oil, maple syrup, balsamic vinegar, Dijon mustard, and minced garlic. Season with salt and pepper to taste.

Combine Ingredients: Pour the maple mixture over the Brussels sprouts and toss well to ensure they are evenly coated.

Roast the Brussels Sprouts: Spread the Brussels sprouts in a single layer on a baking sheet. Make sure they are evenly spaced to allow for proper roasting.

Add Walnuts (Optional): If using walnuts, sprinkle them on top of the Brussels sprouts for added crunch.

Bake: Roast in the preheated oven for 20-25 minutes or until the Brussels sprouts are tender and caramelized, stirring halfway through for even cooking.

Serve: Remove from the oven, and if desired, sprinkle with crumbled feta cheese before serving. Enjoy your delicious maple roasted garlic Brussels sprouts!
