Ingredients

For the Maple Glazed Salmon:

4 salmon fillets (6 oz each)

1/4 cup pure maple syrup

2 tablespoons soy sauce (low sodium)

1 tablespoon Dijon mustard

1 tablespoon olive oil

2 cloves garlic, minced

Freshly ground black pepper, to taste

Lemon wedges, for serving

Fresh parsley, for garnish

For the Pear Relish:

2 ripe pears, peeled, cored, and diced

1/4 cup red onion, finely chopped

1/4 cup fresh cranberries, chopped

1 tablespoon honey or maple syrup

1 tablespoon apple cider vinegar

1 tablespoon fresh mint, chopped

Salt and pepper, to taste

Instructions

Prepare the Marinade: In a bowl, whisk together the maple syrup, soy sauce, Dijon mustard, olive oil, minced garlic, and black pepper. Set aside about 2 tablespoons of the marinade for basting the salmon later.

Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes up to 1 hour.

Make the Pear Relish: In a separate bowl, combine the diced pears, red onion, chopped cranberries, honey (or maple syrup), apple cider vinegar, and fresh mint. Season with salt and pepper to taste. Mix gently, cover, and set aside to allow the flavors to meld.

Preheat the Grill or Oven: If using a grill, preheat to medium-high heat. If using an oven, preheat to 400°F (200°C).

          Cook the Salmon:

            - Grilling Method: Place the marinated salmon fillets on the grill. Grill each side for 4-5 minutes, basting with the reserved marinade during cooking, until the salmon flakes easily with a fork and has nice grill marks.

              - Oven Method: Place the marinated salmon fillets on a lined baking sheet. Bake in the preheated oven for 12-15 minutes, basting halfway through with the reserved marinade.

Serve: Once the salmon is cooked through, remove from heat. Serve the glazed salmon with a generous scoop of pear relish on top. Garnish with lemon wedges and fresh parsley for a burst of color.

Enjoy! Pair this dish with a side of creamy mashed potatoes or a fresh green salad for a complete meal.
