2 large sweet potatoes, peeled and diced

6 slices of thick-cut bacon, chopped

4 large eggs

1 cup milk (or almond milk for a dairy-free option)

1/4 cup pure maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

Salt and pepper to taste

1/2 cup shredded sharp cheddar cheese (optional)

2 tablespoons chopped fresh chives (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer it to a paper towel-lined plate, allowing the excess grease to drain. Leave about 1-2 tablespoons of bacon fat in the skillet.

      Sauté Sweet Potatoes: In the same skillet with the bacon fat, add the diced sweet potatoes. Season with salt and pepper. Sauté over medium heat for about 10-12 minutes, stirring occasionally, until they are tender and slightly caramelized. Remove from heat.

        Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and nutmeg until well combined.

          Combine Ingredients: In a greased 9x13-inch baking dish, spread the sautéed sweet potatoes evenly. Sprinkle the crispy bacon over the sweet potatoes. If using, add the shredded cheddar cheese on top.

            Pour the Egg Mixture: Pour the egg mixture evenly over the sweet potato and bacon layers. Gently press down with a spatula to ensure everything is submerged in the egg mixture.

              Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the eggs are set and the top is lightly golden.

                Cool and Garnish: Once done baking, let it cool for a few minutes. Sprinkle fresh chopped chives on top for garnish before serving.
