4 large flour tortillas

2 cups shredded sharp cheddar cheese

1 cup cooked black beans (rinsed and drained)

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 small zucchini, grated

1 small red onion, finely chopped

2 cloves garlic, minced

1 tsp cumin powder

1 tsp smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

1/4 cup fresh cilantro, chopped (for garnish)

1 avocado, sliced (for serving)

Salsa and sour cream (for serving)

Instructions
 

Prepare the Filling: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the red onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.

    Add Veggies: Stir in the diced red bell pepper, grated zucchini, corn, and black beans. Season with cumin, smoked paprika, salt, and pepper. Cook for another 5-7 minutes until the vegetables are tender and heated through.

      Assemble the Quesadillas: Place a tortilla in a separate large skillet over medium heat. Sprinkle a generous amount of cheddar cheese onto one half of the tortilla. On top of the cheese, add a few spoonfuls of the veggie filling, then top with more cheddar cheese before folding the tortilla in half.

        Cook the Quesadilla: Cook for about 3-4 minutes on each side until the tortilla is golden brown and the cheese has melted. Remove from the skillet and repeat the process with the remaining tortillas and filling.

          Slice and Serve: Cut the quesadillas into wedges and arrange them on a platter. Garnish with fresh cilantro and serve with avocado slices, salsa, and sour cream on the side.
