Ingredients

4 salmon fillets (skin-on recommended)

1 bunch of fresh asparagus, trimmed

3 tablespoons olive oil

Zest of 1 lemon

2 tablespoons fresh lemon juice

2 tablespoons fresh dill, chopped (or 2 teaspoons dried dill)

3 cloves garlic, minced

Salt and pepper to taste

Lemon wedges and extra dill for garnish (optional)

Instructions

Prep the Asparagus:

Preheat your oven to 400°F (200°C). While the oven warms, place the trimmed asparagus on a large baking sheet. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and toss to coat evenly.

      Prepare the Marinade:

In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon zest, lemon juice, minced garlic, chopped dill, salt, and pepper. This will act as a marinade for the salmon.

          Marinate the Salmon:

Place the salmon fillets skin-side down on the same baking sheet as the asparagus. Brush the lemon dill marinade generously over the tops of each fillet, allowing it to soak in for a few minutes.

              Roast in the Oven:

Place the baking sheet in the preheated oven and roast for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The asparagus should be tender-crisp by this time.

                  Serve:

Carefully remove the baking sheet from the oven. To plate, serve the salmon alongside the roasted asparagus. Garnish with fresh lemon wedges and additional dill, if desired.

                      Enjoy!

Dig into the bright and fresh flavors of this Lemon Dill Salmon with Asparagus, perfect for a light and healthy meal.
