Ingredients

1 pound ground beef (or turkey for a leaner option)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley (or 2 tablespoons dried parsley)

1 teaspoon garlic powder

1 teaspoon onion powder

1 large egg

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

12 small hoagie rolls or slider buns

1 cup shredded mozzarella cheese

Optional toppings: sliced black olives, pepperoni slices, or bell pepper strips

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the meatballs: In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan, parsley, garlic powder, onion powder, egg, salt, and pepper. Mix until well combined.

Form the meatballs: Roll the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

Bake the meatballs: Cook in the preheated oven for 15-18 minutes, or until cooked through and no longer pink in the center.

Heat the marinara sauce: While the meatballs are baking, warm the marinara sauce in a small saucepan over medium heat. Once heated, add the cooked meatballs and gently stir to coat them in the sauce.

Prepare the subs: If desired, slice the hoagie rolls lengthwise without cutting all the way through. Place a few meatballs (about 2-3) inside each roll along with a generous spoonful of marinara sauce.

Top it off: Sprinkle shredded mozzarella cheese on top of the meatballs in each sub.

Melt the cheese: Place the prepared subs back onto the baking sheet and return to the oven. Bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve: Remove from the oven, let cool slightly, and serve with optional toppings like sliced olives or pepperoni for fun customization. Enjoy these delicious mini meatball subs!
