Ingredients

4 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

1 tablespoon olive oil

2 tablespoons honey

2 tablespoons balsamic vinegar

1 teaspoon fresh thyme leaves (or ¼ teaspoon dried thyme)

Salt and pepper to taste

1 cup baby spinach (for serving)

Crumbled feta cheese (optional, for garnish)

Instructions

Marinate the Chicken: In a large bowl, whisk together olive oil, honey, balsamic vinegar, thyme, salt, and pepper. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and let it marinate in the refrigerator for at least 30 minutes (up to 4 hours for more flavor).

Prepare the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.

Grill the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken breasts on the preheated grill and cook for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C) and have beautiful grill marks.

Grill the Peaches: While the chicken is grilling, place the peach slices on the grill. Grill for 2-3 minutes on each side until they are slightly charred and caramelized.

Serve: Once the chicken is cooked through, remove it from the grill and let it rest for a few minutes. Serve the chicken on a bed of baby spinach, topped with grilled peaches, and garnish with crumbled feta cheese if desired.

Enjoy: Drizzle with any remaining marinade (simmered for safety) or a touch more honey before serving for an extra kick of flavor!
