Italian Sausage and Pepper Pasta Skillet

12 ounces of penne pasta

1 tablespoon olive oil

1 pound Italian sausage (mild or spicy, casings removed)

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 medium onion, sliced

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, adjust to heat preference)

1 can (14.5 ounces) diced tomatoes (with juices)

1 cup chicken or vegetable broth

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cooking until al dente according to package instructions. Drain and set aside.

    Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it into smaller pieces with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

      Add the Vegetables: To the same skillet, add the sliced bell peppers and onion. Sauté for about 5 minutes until the vegetables start to soften. Add the minced garlic, dried oregano, and red pepper flakes. Cook for an additional 1-2 minutes until fragrant.

        Combine Ingredients: Pour in the diced tomatoes (with their juices) and the chicken or vegetable broth. Stir well and bring the mixture to a simmer. Let it cook for about 5 minutes to meld the flavors.

          Add the Pasta: Add the cooked penne pasta to the skillet, tossing everything together. Cook for an additional 2-3 minutes until the pasta is heated through. Season with salt and pepper to taste.

            Finish and Serve: Remove from heat and sprinkle the grated Parmesan over the pasta. Toss lightly to combine. Garnish with fresh basil leaves before serving.
