1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

1/3 cup vegetable oil

2 large eggs

1/4 cup honey (plus extra for drizzling)

1/2 cup unsalted butter, softened

Sea salt, for topping

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease with cooking spray.

    Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix the buttermilk, vegetable oil, eggs, and honey until fully blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

          Fill Muffin Tins: Divide the batter evenly among the prepared muffin tins, filling each cup about 2/3 full.

            Bake: Place in the oven and bake for 15-18 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

              Prepare Honey Butter: While the muffins are baking, prepare the honey butter. In a small bowl, mix the softened butter with 1/4 cup honey until creamy and well combined.

                Cool & Serve: Once the muffins are baked, let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool slightly. Drizzle a little extra honey on top, sprinkle with coarse sea salt, and serve warm with the honey butter.
