For the Chicken:

1.5 lbs boneless, skinless chicken thighs

1 cup honey BBQ sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

For the Sliders:

12 slider buns (white or whole wheat)

1 cup shredded coleslaw mix

½ cup mayonnaise

1 tablespoon apple cider vinegar

1 teaspoon sugar

Optional: pickles for topping

Fresh parsley for garnish

Instructions
 

Prepare the Chicken:

    - In a bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken thighs and toss to coat thoroughly. Marinate for at least 30 minutes (or up to overnight in the fridge for more flavor).

      Cook the Chicken:

        - Preheat your grill or skillet over medium heat. Cook the marinated chicken thighs for about 5-7 minutes on each side or until they reach an internal temperature of 165°F (74°C).

          - In the final few minutes of cooking, brush the chicken with the honey BBQ sauce to glaze it beautifully. Remove from the heat and let it rest for a few minutes.

            Prepare the Slaw:

              - In a mixing bowl, combine the shredded coleslaw mix, mayonnaise, apple cider vinegar, and sugar. Stir until well mixed and set aside.

                Assemble the Sliders:

                  - Slice the slider buns in half. On the bottom half of each bun, place a few pieces of the glazed chicken. Top with a generous spoonful of the coleslaw. If desired, add pickles for an extra crunch and flavor.

                    Serve:
