1 pound ground beef (or half beef, half pork for added flavor)

1 cup breadcrumbs (preferably whole wheat)

1/2 cup green bell pepper, finely chopped

2 cloves garlic, minced

1/2 cup milk

1 large egg

2 tablespoons Worcestershire sauce

2 tablespoons ketchup (plus extra for topping)

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

For the Mashed Cauliflower:

1 medium head of cauliflower, cut into florets

1/4 cup cream cheese (or Greek yogurt for a lighter option)

1/4 cup milk

2 tablespoons butter

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Prepare the Meatloaf Mixture:

    - Preheat your oven to 350°F (175°C).

      - In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped onion, green bell pepper, minced garlic, milk, egg, Worcestershire sauce, ketchup, Dijon mustard, thyme, salt, pepper, and smoked paprika. Mix well until all ingredients are evenly combined.

        Shape and Bake:

          - Transfer the mixture into a loaf pan and shape it into a loaf. If you prefer, you can shape it by hand and place it on a parchment-lined baking sheet.
