1 lb ground turkey

2 cups Hatch green chilies, roasted and diced (fresh or canned)

1 cup shredded cheddar cheese

1 cup mixed greens or spinach

1/2 cup diced tomatoes

1/4 cup red onion, finely chopped

1 avocado, sliced

1/2 cup sour cream or Greek yogurt

4 large flour tortillas or whole wheat wraps

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil for cooking

Instructions
 

Prepare the Filling:

    - In a large skillet over medium heat, add a drizzle of olive oil. Once the oil is hot, add the ground turkey. Cook until browned and cooked through, about 7-10 minutes.

      - Stir in the diced Hatch green chilies, ground cumin, garlic powder, salt, and pepper. Cook for an additional 2-3 minutes until the chilies are heated through. Remove from heat and set aside.

        Assemble the Wrap Pockets:

          - Lay out each tortilla on a clean surface. In the center of each tortilla, layer a handful of mixed greens, followed by a portion of the turkey and chili mixture (approximately 1/4 of the filling per tortilla).

            - Top the turkey mixture with diced tomatoes, red onion, cheddar cheese, and avocado slices.

              Wrap It Up:

                - Fold in the sides of the tortilla and then roll it up tightly from the bottom to create a pocket. Make sure all the fillings are secured inside.

                  - If desired, you can secure the wraps with toothpicks or wrap them in parchment paper for easy handling.

                    Grill or Toast:
