Hatch Chili Turkey Tortilla Melts

1 lb ground turkey

2 cups Hatch green chilies, chopped (fresh or roasted)

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp ground cumin

½ tsp smoked paprika

½ tsp salt

½ tsp black pepper

8 medium flour tortillas

¼ cup fresh cilantro, chopped

Salsa and sour cream for serving (optional)

Prepare the Turkey Mixture: In a large skillet over medium heat, add the ground turkey. Cook and crumble until the turkey is browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.

    Add Seasonings and Chilies: To the turkey, add the garlic powder, onion powder, ground cumin, smoked paprika, salt, black pepper, and chopped Hatch green chilies. Stir to combine and cook for an additional 3-4 minutes until the chilies are heated through.

      Assemble the Tortilla Melts: On a clean surface, lay out the tortillas. Evenly distribute the turkey and chili mixture among the tortillas, placing the filling in the center. Top each with a generous amount of Monterey Jack and sharp cheddar cheese.

        Fold the Tortillas: Carefully fold the sides of each tortilla over the filling and then roll from the bottom to create a wrap. Secure with toothpicks if needed.
