2 large sweet potatoes, peeled and diced

1 cup Hatch green chiles, roasted, peeled, and diced (canned or fresh)

1/2 cup milk (whole, almond, or coconut)

3 tablespoons unsalted butter

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Boil the Sweet Potatoes: In a large pot, bring water to a boil. Add the diced sweet potatoes and cook for about 15-20 minutes, or until fork-tender. Drain and return to the pot.
