4 large all-beef hot dogs

4 fresh, soft hot dog buns

1 cup roasted Hatch green chiles, diced (fresh or canned)

1 cup kidney beans, drained and rinsed

1 cup diced tomatoes (canned or fresh)

1/2 cup chopped onion (red or white)

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

Salt and black pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Pickled jalapeños (optional, for serving)

Instructions
 

Prepare the Chili Base: In a medium pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Veggies and Spices: Toss in the diced roasted Hatch green chiles, kidney beans, and diced tomatoes. Season with chili powder, cumin, salt, and black pepper. Stir well to combine and let the mixture simmer on low heat for about 15 minutes, allowing the flavors to meld.

      Cook the Hot Dogs: While the chili is simmering, grill or boil the hot dogs according to your preference. If grilling, cook for about 6-8 minutes until they are nicely charred. If boiling, simmer in hot water for 5-7 minutes.

        Toast the Buns: Optional but recommended! You can toast the hot dog buns on the grill for about 1-2 minutes until lightly crispy. If not grilling, use a toaster oven.
