Hatch Chili Chicken Nacho Bake

2 cups cooked shredded chicken

1 can (15 oz) Hatch green chili enchilada sauce

1 can (10 oz) diced tomatoes with green chilies, drained

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen or canned)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 bag (10-12 oz) tortilla chips

1/2 cup sliced black olives (optional)

1/4 cup fresh cilantro, chopped

1 avocado, diced (for topping)

1 lime, cut into wedges (for serving)

Salt and pepper to taste

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Chicken Mixture: In a large mixing bowl, combine the shredded chicken, Hatch green chili enchilada sauce, diced tomatoes with green chilies, black beans, corn, half of each type of cheese (cheddar and Monterey Jack), and season with salt and pepper. Mix well until all ingredients are combined.

      Layering: In a large baking dish (approximately 9x13 inches), start by placing a generous layer of tortilla chips at the bottom. Spoon half of the chicken mixture over the chips, spreading it evenly. Add another layer of tortilla chips on top, then add the remaining chicken mixture, followed by the last layer of chips.

        Cheesy Topping: Sprinkle the remaining cheddar and Monterey Jack cheese on top of the final layer of chips. If desired, add sliced black olives for extra flavor.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

            Garnish: Once baked, remove the nacho bake from the oven and let it cool for a few minutes. Garnish with fresh cilantro and diced avocado. Serve with lime wedges on the side for a zesty kick.
