Ingredients

1 cup natural peanut butter (unsweetened)

1/2 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

1 cup rolled oats

1/2 cup protein powder (chocolate or vanilla)

1/4 tsp salt

1/2 tsp vanilla extract

1/4 cup dark chocolate chips (optional, use sugar-free for a healthier version)

2 tbsp coconut oil (for a glossy finish)

Instructions

Prepare the Baking Pan: Line an 8x8 inch (20x20 cm) baking pan with parchment paper, leaving some overhang for easy removal later.

Mix the Wet Ingredients: In a medium mixing bowl, combine the natural peanut butter, honey (or maple syrup), and vanilla extract. Stir until well blended and creamy.

Add the Dry Ingredients: To the wet mixture, add the cocoa powder, rolled oats, protein powder, and salt. Mix until all the ingredients are combined into a thick, sticky batter.

Fold in Chocolate Chips: Gently fold in the dark chocolate chips if you're using them, ensuring they are evenly distributed throughout the mixture.

Transfer to Baking Pan: Spoon the mixture into the prepared baking pan, spreading it out evenly with a spatula. Press down firmly to compact the mixture firmly in the pan.

Chill in the Refrigerator: Place the pan in the fridge and let it chill for at least 1-2 hours, or until firm.

Prepare the Chocolate Drizzle: In a small microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each interval until melted and smooth.

Drizzle the Chocolate: Remove the chilled bars from the refrigerator and lift them out of the pan using the parchment paper. Drizzle the melted chocolate over the top of the bars.

Slice and Serve: Allow the chocolate drizzle to set for about 10-15 minutes at room temperature. Once set, slice the bars into squares or rectangles as desired.

Store: Store the bars in an airtight container in the fridge for up to a week, or freeze for up to a month for longer enjoyment.
