Guilt-Free Chocolate Chip Bites

Ingredients
  

1 cup almond flour

1/2 cup rolled oats

1/4 cup unsweetened cocoa powder

1/4 cup coconut oil, melted

1/3 cup maple syrup or honey

1/4 cup almond butter (or any nut butter of choice)

1/2 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips (preferably sugar-free or at least 70% cocoa)

Optional: 1/4 cup chopped nuts (e.g., walnuts or pecans) for added crunch

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the almond flour, rolled oats, cocoa powder, baking soda, and salt. Whisk together until well combined.

      In a separate bowl, mix the melted coconut oil, maple syrup, almond butter, and vanilla extract until smooth and creamy.

        Pour the wet ingredients into the dry mixture and stir until thoroughly combined. The dough should be slightly sticky but manageable. If it's too dry, add a teaspoon of water or nut milk. If it's too wet, sprinkle in a bit more almond flour.

          Fold in the dark chocolate chips and, if using, the chopped nuts.

            Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each ball as they will spread slightly.

              Gently flatten each ball with the back of a fork or your hand to create a bite-sized cookie shape.

                Bake in the preheated oven for 10-12 minutes or until the edges look firm but the centers are still soft.

                  Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely. This will help them firm up a bit more.
