Grilled Veggie Quesadillas

4 large whole wheat tortillas

1 bell pepper (red or yellow), diced

1 medium zucchini, sliced into thin rounds

1 cup mushrooms, sliced

1 cup fresh spinach leaves

1 small red onion, thinly sliced

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

Optional toppings: salsa, guacamole, Greek yogurt, or sour cream

Instructions
 

Prepare the Veggies: In a large mixing bowl, combine the diced bell pepper, zucchini, mushrooms, spinach, and red onion. Drizzle with olive oil and sprinkle garlic powder, cumin, salt, and pepper. Toss well until all the veggies are evenly coated.

    Sauté the Vegetables: Heat a grill pan or a skillet over medium heat. Add the seasoned vegetables and sauté for about 5-7 minutes or until they are tender and slightly charred. Remove from heat and set aside.

      Assemble the Quesadillas: Lay one tortilla flat on a clean surface. On one half of the tortilla, sprinkle a layer of mozzarella and cheddar cheeses. Add a generous amount of the sautéed vegetable mixture on top of the cheese. Top with another sprinkle of cheese for good measure. Fold the tortilla in half to cover the filling.

        Grill the Quesadillas: In the same pan, add a touch more olive oil if needed, then carefully place the folded quesadilla in the pan. Grill for about 3-4 minutes on one side until golden brown and crispy. Flip and cook for an additional 3-4 minutes on the other side, ensuring the cheese melts.

          Repeat: Repeat the assembly and grilling process with the remaining tortillas and filling.

            Slice and Serve: Once all the quesadillas are grilled to perfection, remove them from the pan and let them cool for a minute. Slice into wedges and serve warm with salsa, guacamole, and your favorite toppings.
