4 slices of whole grain bread

4 oz. sliced turkey or chicken breast

4 oz. cheddar cheese, sliced

1/2 cup baby spinach leaves

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon olive oil

Salt and pepper, to taste

Optional: 1/4 cup sliced pickles for added crunch

Prepare the Spread: In a small bowl, mix together mayonnaise and Dijon mustard until well combined. Season with a little salt and pepper to taste. Set aside.

    Assemble the Sandwiches: Lay out two slices of whole grain bread on a clean surface. Spread a generous layer of the mayo-mustard mix on each slice. On one slice, layer half of the turkey/chicken, followed by a slice of cheddar cheese, and add a handful of baby spinach. If desired, include some sliced pickles for extra flavor. Top with another slice of bread (mayo side down) and repeat with the remaining ingredients to create a second sandwich.

      Heat the Pan: In a medium skillet, heat olive oil over medium-low heat.

        Grill the Sandwiches: Carefully place one sandwich into the skillet. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
