Grilled Fresh Summer Recipes Sandwich

4 slices of rustic sourdough bread

1 medium zucchini, thinly sliced

1 medium yellow squash, thinly sliced

1 red bell pepper, sliced into strips

1 cup cherry tomatoes, halved

1 avocado, mashed

4 oz fresh mozzarella cheese, sliced

2 tbsp olive oil

1 tbsp balsamic glaze

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

Fresh basil leaves for garnish

Instructions
 

Prep the Vegetables: In a large bowl, combine the zucchini, yellow squash, bell pepper, and cherry tomatoes. Drizzle with olive oil and sprinkle with garlic powder, salt, and black pepper. Toss well to coat.

    Grill the Vegetables: Preheat your grill or grill pan over medium heat. Place the prepared vegetables on the grill and cook for about 3-4 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and set aside.

      Prepare the Bread: Lightly brush one side of each slice of sourdough bread with olive oil. On the unbrushed side, spread a generous amount of mashed avocado and layer with sliced fresh mozzarella.

        Assemble the Sandwich: Top the mozzarella with the grilled vegetables, then drizzle with balsamic glaze. Cap the sandwich with another slice of bread, oiled side facing out.

          Grill the Sandwiches: Heat the grill pan over medium heat. Place the assembled sandwiches on the pan and grill for about 3-4 minutes until the bread is golden brown and crispy. Carefully flip and grill the other side for another 3-4 minutes, pressing down lightly with a spatula.

            Serve: Once both sides are grilled to perfection, remove the sandwiches from the grill. Let them cool for a minute, then cut in half and garnish with fresh basil leaves before serving.
