4 large ears of fresh corn, husked

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 small jalapeño, seeded and minced (optional for heat)

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

Salt and pepper to taste

Feta cheese, for garnish (optional)

Instructions
 

Prepare the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill and cook for about 10-15 minutes, turning occasionally, until charred all over. Remove from the grill and let cool slightly.

    Chop the Veggies: While the corn is cooling, prepare the other ingredients. Dice the red bell pepper, chop the red onion, slice the cherry tomatoes in half, and mince the jalapeño if using.

      Combine Ingredients: Once the corn is cool enough to handle, carefully cut the kernels off the cob. In a large mixing bowl, combine the grilled corn, diced bell pepper, red onion, cherry tomatoes, jalapeño, and chopped cilantro.

        Dress the Salad: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to taste. Pour this dressing over the salad mixture and toss gently to combine.

          Add Avocado: Just before serving, fold in the diced avocado to ensure it stays intact. Taste and adjust seasoning if needed.
