2 boneless, skinless chicken breasts

1 cup fresh basil pesto (store-bought or homemade)

4 large whole wheat tortillas or wraps

1 cup fresh spinach leaves

1 medium red bell pepper, sliced

1 medium cucumber, thinly sliced

1 cup shredded mozzarella cheese

1 tablespoon olive oil

Salt and pepper to taste

Optional: lemon wedges for garnish

Prepare the Chicken: Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Preheat your grill or grill pan over medium-high heat.

    Grill the Chicken: Once the grill is hot, cook the chicken breasts for about 6-7 minutes on each side or until fully cooked and juices run clear. The internal temperature should reach 165°F (74°C). Remove from grill and let rest for 5 minutes.

      Slice the Chicken: Once cooled, slice the grilled chicken into thin strips.

        Assemble the Wraps: Lay out the whole wheat tortillas on a clean surface. Spread about 2 tablespoons of pesto on each tortilla, leaving a small border around the edge.

          Add Fillings: On top of the pesto, layer fresh spinach leaves, sliced red bell pepper, cucumber, shredded mozzarella cheese, and grilled chicken strips.

            Roll the Wraps: Tightly roll each tortilla, starting at one end, folding in the sides as you go to secure the filling.

              Grill the Wraps (Optional): For a crispy finish, place the rolled wraps back on the grill for about 2-3 minutes per side, until the tortillas are golden and the cheese is melty.
