Green Chili Breakfast Sliders

Ingredients
  

1 pound ground sausage (pork or turkey)

1 cup green chilies (diced, fresh or canned)

4 large eggs

1 cup shredded cheddar cheese

12 slider buns (mini brioche or potato rolls)

1 tablespoon olive oil

1 tablespoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 avocado (sliced, for garnish)

Fresh cilantro (for garnish)

Hot sauce (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Sausage: In a large skillet over medium heat, add the ground sausage. Break it up with a spatula and cook until fully browned and no longer pink, about 7-10 minutes. Drain any excess grease.

      Add Green Chilies: Stir in the diced green chilies, garlic powder, onion powder, salt, and pepper. Cook for another 2-3 minutes until the chilies are heated through and fragrant.

        Scramble the Eggs: In a separate bowl, whisk the eggs until well combined. In a non-stick skillet, add olive oil over medium heat and pour in the eggs. Cook, stirring occasionally, until the eggs are scrambled and just set. Remove from heat.

          Assemble the Sliders: Split the slider buns in half. On each bottom half, layer a generous scoop of the sausage and green chili mixture, a spoonful of scrambled eggs, and a sprinkle of shredded cheddar cheese. Place the top halves of the buns on each slider.

            Bake: Place the assembled sliders on a baking sheet. Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and the buns are slightly toasted.

              Garnish and Serve: Remove the sliders from the oven and cool slightly. Garnish with sliced avocado and fresh cilantro. Serve with hot sauce on the side for those who like an extra kick.
