Greek Chicken Meatballs with Tzatziki

For the Greek Chicken Meatballs:

1 lb ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 small onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

1 tablespoon olive oil (for cooking)

For the Tzatziki Sauce:

1 cup Greek yogurt

1/2 cucumber, grated and excess water squeezed out

1 clove garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Instructions
 

Prepare the Meatballs:

    - In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, chopped onion, parsley, oregano, salt, black pepper, and egg.

      - Mix all ingredients thoroughly until well combined.

        - Preheat a skillet over medium heat and add olive oil. Once the oil is hot, begin shaping the chicken mixture into walnut-sized meatballs and place them in the skillet.

          - Cook the meatballs for about 6-7 minutes on each side until they turn golden brown and are cooked through (internal temperature should reach 165°F).

            Make the Tzatziki Sauce:

              - In a separate bowl, mix together the Greek yogurt, grated cucumber, minced garlic, dill, olive oil, lemon juice, salt, and pepper until smooth.

                - Taste and adjust seasoning if needed. Refrigerate the tzatziki for at least 20 minutes to let the flavors meld.

                  Serve:

                    - Once the meatballs are cooked, serve them warm with a generous side of tzatziki. Accompany with warm pita bread, fresh veggies, or a simple Greek salad for a complete meal.
