Ingredients

1 lb ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/2 cup finely chopped onion

1 garlic clove, minced

1/2 cup milk (or a dairy-free alternative)

1 large egg

2 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper to taste

1/4 cup ketchup (for topping)

1 tbsp brown sugar (optional, for a touch of sweetness)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This will prepare the cooking environment for those delicious meatloaf minis.

Sauté the Vegetables: In a small skillet, heat a splash of olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes or until translucent. Add minced garlic and cook for an additional minute until fragrant. Remove from heat and let cool slightly.

Combine Ingredients: In a large mixing bowl, combine the ground turkey, sautéed onion and garlic, breadcrumbs, Parmesan cheese, milk, egg, Worcestershire sauce, Dijon mustard, thyme, oregano, salt, and pepper. Use your hands or a spatula to mix until well combined.

Shape the Minis: Line a muffin tin with non-stick spray or paper liners. Scoop the turkey mixture into each muffin cup, filling them about three-quarters full to allow for rising. Press them down gently to ensure they hold their shape while cooking.

Prepare the Topping: In a small bowl, mix the ketchup with brown sugar (if using) until well blended. Spread a spoonful of this mixture over the top of each meatloaf mini, creating a sweet and tangy glaze.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the meatloaf minis are cooked through and golden brown on top. An internal thermometer should register 165°F (74°C).

Rest and Serve: Once baked, remove the muffin tin from the oven and let the meatloaf minis rest for about 5 minutes. Carefully remove them from the tin and serve warm with your favorite sides such as mashed potatoes or a fresh garden salad.
