Ingredients

1 jar (16 oz) dill pickles, sliced into 1/4-inch thick rounds

1 cup all-purpose flour

1 cup cornmeal

2 teaspoons garlic powder

1 teaspoon paprika

1 teaspoon cayenne pepper (adjust based on heat preference)

1 teaspoon black pepper

1 teaspoon salt

2 large eggs

1 cup buttermilk

Vegetable oil, for frying

Optional: ranch dressing or your favorite dipping sauce for serving

Instructions

Prepare the Pickles: Drain the pickles thoroughly and pat them dry with paper towels to remove excess moisture. This will help the batter adhere better and ensure they fry up crispy.

Set Up Breading Station: In a shallow dish, combine the flour with garlic powder, paprika, cayenne pepper, black pepper, and salt. In another bowl, whisk together the eggs and buttermilk until smooth.

Coat the Pickles: Dip each pickle slice first into the seasoned flour, ensuring it's well-coated, then dip into the egg mixture, and finally back into the flour mixture for a second coating. This double-breading technique gives the fried pickles an extra crunch.

Heat the Oil: In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium-high heat. To test if the oil is ready, drop a small amount of the batter into the oil; it should sizzle and rise to the surface.

Fry the Pickles: Carefully add a few coated pickle slices to the hot oil (do not overcrowd the pan) and fry until they are golden brown and crispy, about 2-3 minutes per side. Use a slotted spoon to flip them halfway through for even cooking.

Drain and Cool: Once done, remove the fried pickles from the oil and place them on a paper towel-lined plate to drain excess oil. Continue frying the remaining pickles in batches.

Serve: Serve the golden brown fried pickles hot with your favorite dipping sauce, such as ranch dressing or a spicy aioli.
