2 cups cooked, shredded chicken

1 cup refried beans

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1/2 cup salsa (plus extra for serving)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

8 large flour tortillas

Olive oil spray

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Prep the Filling: In a large mixing bowl, combine the shredded chicken, refried beans, shredded cheese, salsa, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Mix until well combined.

    Assemble the Chimichangas: Warm the tortillas in the microwave for about 15-20 seconds to make them pliable. Place about 1/3 cup of the chicken mixture in the center of each tortilla. Fold in the sides, then roll up from the bottom to create a tight wrap.

      Prepare for Baking: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

        Bake the Chimichangas: Place the chimichangas seam-side down on the parchment-lined baking sheet. Spray the tops lightly with olive oil spray. Bake for 20-25 minutes, or until they are golden brown and crispy.

          Serve: Remove from the oven and let them cool for a few minutes. Garnish with fresh cilantro and serve with additional salsa and sour cream on the side.
