1 lb (450g) sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: lemon wedges (for serving)

Prepare the Steak: Start by patting the steak cubes dry with a paper towel. This will ensure a good sear. Season them generously with salt, black pepper, and smoked paprika.

    Heat the Pan: In a large skillet, preferably cast iron, heat 2 tablespoons of the butter over medium-high heat until melted and foamy.

      Cook the Steak: Add the steak cubes to the hot skillet in a single layer (you may need to do this in batches). Sear for about 2-3 minutes on each side, or until a crust forms and the steak is cooked to your desired level (medium-rare is about 130°F/54°C). Remove the steak bites and set them aside on a plate.

        Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium. Add the remaining 2 tablespoons of butter, followed by the minced garlic and thyme. Sauté for about 1-2 minutes, stirring frequently, until the garlic becomes fragrant and slightly golden. Be careful not to burn the garlic.

          Combine: Return the cooked steak bites to the skillet and toss them in the garlic butter sauce until well-coated. Cook for an additional minute to combine the flavors.
