Garlic Butter Steak and Veggie Sheet Pan

Ingredients
  

1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

2 cups broccoli florets

1 red bell pepper, sliced

1 cup cherry tomatoes, halved

6 cloves garlic, minced

1/2 cup unsalted butter, melted

3 tablespoons olive oil

2 teaspoons dried thyme

2 teaspoons smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Vegetables: In a large bowl, combine the halved baby potatoes, broccoli florets, sliced red bell pepper, and halved cherry tomatoes.

      Seasoning the Veggies: Drizzle with 2 tablespoons of olive oil, season with salt, pepper, thyme, and smoked paprika. Toss well to coat all the vegetables evenly.

        Spread on Sheet Pan: Spread the seasoned vegetables in an even layer on a large sheet pan.

          Prepare Steak: In a separate bowl, combine the cubed sirloin steak, minced garlic, melted butter, remaining olive oil, salt, and pepper. Toss to coat the steak in the garlic butter mixture.

            Add Steak to Pan: After the vegetables have been baking for 15 minutes, remove the sheet pan from the oven. Push the vegetables aside and add the garlic butter steak cubes to the pan.

              Bake Everything Together: Return the sheet pan to the oven and bake everything for an additional 15-20 minutes, or until the steak reaches your desired level of doneness and the vegetables are tender and slightly caramelized.
