Ingredients

1 lb baby carrots (or whole carrots, peeled and cut into sticks)

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon honey (optional for sweetness)

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Carrots: If using whole carrots, cut them into uniform sticks for even cooking. Place the carrots in a large mixing bowl.

Make the Garlic Butter: In a small bowl, combine the melted butter, minced garlic, thyme, and honey (if using). Whisk until fully incorporated.

Coat the Carrots: Pour the garlic butter mixture over the carrots. Season with salt and pepper to taste. Toss well to ensure all the carrots are evenly coated.

Arrange on Baking Sheet: Spread the carrots in a single layer on a baking sheet lined with parchment paper for easy cleanup.

Roast the Carrots: Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the carrots are tender and caramelized, with golden edges.

Garnish and Serve: Remove from the oven, transfer to a serving dish, and sprinkle with fresh parsley. Serve warm.
