2 cups cooked jasmine rice (preferably day-old)

1 cup pineapple chunks (fresh or canned)

1/2 cup diced mango

1/2 cup red bell pepper, diced

1/2 cup peas (fresh or frozen)

2 green onions, chopped

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 large eggs, beaten

1 tablespoon fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Lime wedges (for serving)

Prepare the Ingredients: Start by gathering all your ingredients. If you are using fresh pineapple and mango, peel and dice them into bite-sized pieces. Make sure your rice is cold and clump-free for best results.

    Cook the Eggs: In a large skillet or wok, heat the vegetable oil over medium heat. Pour in the beaten eggs and scramble them until fully cooked. Remove the eggs from the pan and set aside.

      Sauté the Garlic and Vegetables: In the same skillet, add the sesame oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the diced red bell pepper and peas, cooking for another 2-3 minutes until they are slightly tender.
