Ingredients
  

2 cups of plain Greek yogurt

1/2 cup honey or maple syrup (adjust to taste)

1 tsp vanilla extract

1 cup fresh strawberries, hulled and quartered

1 cup fresh kiwi, peeled and sliced

1/4 cup lemon juice

Zest of 1 lemon

Pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Strawberries and Kiwis:

    - In a medium bowl, combine the quartered strawberries and sliced kiwis. Drizzle half the lemon juice over the fruits and toss gently. Allow them to marinate for 10 minutes to enhance their flavors.

      Make the Yogurt Mixture:

        - In a large mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), vanilla extract, lemon zest, and a pinch of salt. Mix until smooth and well combined. Adjust sweetness to your liking.

          Layer the Mixture:

            - Take a silicone mold or an ice cube tray for a unique wedge shape. Spoon a layer of the yogurt mixture into the bottom of each compartment, filling them about 1/4 of the way.

              Add the Fruits:

                - Next, add a layer of the marinated strawberries and kiwis over the yogurt base. Press down gently to ensure they are embedded.

                  Fill It Up:

                    - Pour the remaining yogurt mixture over the fruits until just below the top of the mold. Use a toothpick or a skewer to swirl the mixture slightly, creating a marble effect if desired.

                      Freeze:

                        - Place the mold in the freezer for at least 4-6 hours, or until the wedges are completely solid.
