Ingredients

For the Donut Rings:

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large egg

1/2 cup buttermilk

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

For the Raspberry Yogurt Filling:

1 cup Greek yogurt (plain or vanilla)

1/2 cup fresh raspberries (plus extra for garnish)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

A pinch of salt

For the Topping:

1/4 cup white chocolate chips, melted

Fresh mint leaves (for garnish, optional)

Raspberry powder or crushed freeze-dried raspberries (for dusting, optional)

Instructions

Preheat the oven to 350°F (175°C) and lightly grease a donut pan with cooking spray.

Make the Donut Batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, combine the egg, buttermilk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.

Fill the Pan: Spoon or pipe the donut batter into each section of the donut pan, filling them about two-thirds full.

Bake: Place the pan in the preheated oven and bake for 10-12 minutes or until the donuts are golden and a toothpick inserted comes out clean. Let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Prepare the Raspberry Yogurt Filling: In a medium bowl, mash the fresh raspberries with a fork until you have a chunky puree. Then mix in the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt until smooth. If you prefer a smoother filling, blend until creamy.

Assemble the Donut Rings: Once the donuts are completely cooled, use a small knife to create a small hole in the center of each donut ring and then use a piping bag to fill the center with the raspberry yogurt mixture.

Melt the White Chocolate: In a microwave-safe bowl, melt the white chocolate chips in 20-second intervals until smooth. Let cool slightly before drizzling over each filled donut.

Garnish: Top the drizzle with extra fresh raspberries, crushed freeze-dried raspberries, and mint leaves if using.

Freeze: Place the assembled donuts on a baking sheet and freeze them for at least 2 hours to set.

Serve: Serve the Frozen Yogurt Raspberry Donut Rings straight from the freezer for a refreshing treat!
