2 ripe peaches, peeled and diced

1 cup plain Greek yogurt (or vanilla yogurt for added sweetness)

2 tablespoons honey (or maple syrup)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1 cup graham cracker crumbs

4 tablespoons melted butter

1/4 cup chopped pecans (optional)

Fresh mint leaves for garnish (optional)

Whipped cream (optional for topping)

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and optional chopped pecans. Mix until the crumbs are evenly coated with butter. Divide this mixture into the bottom of 6 small cups or ramekins, pressing down firmly to form a crust.

    Make the Yogurt Filling: In another bowl, mix together the Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon until smooth and well combined.
